Pecan Crust Pumpkin Slices

What You Need:

  • 1/2 C margarine, softened
  • 1 C brown sugar, packed firm
  • 1 1/2 C all purpose flour
  • 1 C old fashioned oats
  • 1 tsp. baking powder
  • 1 tsp. salt, divided
  • 2 C pumpkin puree
  • 1 (14 oz.) can Sweetened condensed milk
  • 2 eggs, slightly beaten
  • 2 tsp. pumpkin pie spice
  • 1 1/2 tsp. vanilla extract
  • 1 C pecans; coarsely chopped

How to Make It:

  1. Place the margarine in a large mixer bowl.
  2. Add the brown sugar and beat with an electric mixer on low speed until creamy.

Grilled Mustard Chops

What You Need:

  • 1 tsp dry mustard
  • 1 tsp celery seed
  • 1 tsp thyme
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp cayenne
  • 4 bone in pork chops, 1 inch thick

How to Make It:

  1. Mix the dry mustard, celery seed, thyme, salt, pepper and cayenne together in a small mixing bowl.
  2. Rub each of the chops on both sides with the spice mixture.
  3. Allow the chops to set at room temperature about 25 minutes.
  4. Place the grill on high temperature.

Mexican Bean and Rice Thermos Meal

My oldest son loves this meal for lunch, its quick and easy can make it him self in the morning before school. And is very filling.  A side salad or some tortilla chips can be added for the perfect lunch.

What You Need:

  • 1/2 C canned black beans
  • 1/2 C canned corn, drained
  • 1/2 C brown rice, cooked
  • 1/4 C salsa

How to Make It:

  1. Place the beans and corn in a saucepan.
  2. Add the cooked brown rice.
  3. Stir in the salsa.
  4. Place the saucepan on the stove over low heat.

Whole Wheat Apple Flapjacks

I will admit this is not the healthiest of recipes but it is a yummy way to start the day or add to a buffet style brunch.

What You Need:

  • 32 soft caramels
  • 1 (12 oz) can evaporated milk
  • 1 C unsalted butter
  • 2 Gala apples, peeled and diced fine
  • 2 eggs
  • 2 TBSP light brown sugar, packed firm
  • 1/2 tsp. vanilla extract
  • 1 C all purpose flour
  • 1 C whole wheat flour
  • 2 tsp. baking powder
  • 2 tsp. ground cinnamon
  • 1/8 tsp. salt

Heavenly Meatballs with Dipping Sauce

Our family has recently decided that meatballs are the greatest thing in the world, So I started messing with different recipes and figuring out what they like and what they like.

What You Need:

  • 2 TBSP vegetable oil
  • 1 C yellow onion, chopped fine
  • 1 garlic clove, minced
  • 1 TBSP curry powder
  • 1 tsp cumin, ground
  • 1 tsp ginger
  • 1 (28 oz.) can plum tomatoes and juice
  • 1 TBSP light brown sugar, packed firm
  • 2 tsp salt, divided
  • 1 tsp pepper, divided
