Candy Cane Brittle

Candy cane lovers are going to love this delicious holiday treat!  Watch for those candy cane sales. These also taste yummy with the flavored candy canes, such as the chocolate mint or the life saver flavors. I noticed these are also a great way to get any aggression out that may creep in during the holiday season.

Ingredients:

2 pounds white chocolate
30 peppermint candy canes
*(If it’s not the holidays get a bag or two of the red and white swirly peppermint candies!)

Thanksgiving Leftover Pot Pie

Ingredients:

  • 1 medium onion, chopped
  • 1 cup carrots, sliced
  • 1 cup celery, diced
  • 1 tablespoon vegetable oil
  • 1 package (9 oz.) frozen chopped spinach
  • 3 cups cooked turkey
  • 1/2 cups country or baked ham
  • 1 can (10 3/4 oz.) canned cream of chicken soup
  • 2 1/2 cup milk, divided
  • 1/4 teaspoon black pepper
  • 1 1/2 cup self-rising flour
  • 1/4 cup Parmesan cheese
  • 1/2 cup butter or margarine

Thanksgiving Leftover Turkey Salad

If your like me you have a ton of left over turkey after Thanksgiving and you run out of ideas to keep the family happy with eating turkey over and over again.  Here is a yummy salad to add to your recipe list.

What You Need:

  • 4 C lettuce, torn into bite size pieces (any type your family prefers)
  • 4 C watercress (I leave these out)
  • 12 oz. turkey, cut into strips
  • 2 Gala apples, cored and cut into slices
  • 1/2 C pecans, toasted (I sometimes mix some almonds in there too)

Sugar Glazed Vegetable Medley

Ingredients:

  • 4 pearl onions, peeled and trimmed
  • 4 Brussels sprouts, trimmed and halved
  • 2 medium turnips, peeled and cut into quarters
  • 2 small carrots, peeled and chopped
  • 1 medium parsnip, peeled and chopped
  • 1 tablespoon unsalted butter
  • 1/4 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Mustard and Maple Baked Ham

Ingredients:

  • 1 smoked ham, about 5 to 6 pounds
  • 1 1/2 cups dry white wine
  • 5 tablespoons Dijon mustard + 2 tablespoons
  • 1/3 cup honey
  • 1/3 cup maple syrup + 3 tablespoons
  • 1 1/4 cups chicken stock
  • 1 teaspoon cornstarch
