Applelicious Sweet Potato Casserole

Many families this time of year have Sweet Potatoes with their holiday meals here is a slight twist to the traditional sweet potatoes that we have grown accustom to.

What You Need:

  • 2 large sweet potatoes
  • 2 Golden Delicious apples, cored and sliced into rings
  • 1/2 C orange juice
  • 1/4 C firmly packed brown sugar
  • 1 tsp. cornstarch
  • 1/8 tsp. ground cloves
  • 2 TBSP pecans pieces

How to Make It:

  1. Place the sweet potatoes in microwave safe dish.
  2. Microwave the potatoes on high 8 minutes, rotating once, until just starting to soften.
  3. Heat the oven to 350 degrees.
  4. When the sweet potatoes have cooled enough to handle peel and cut into chunks.
  5. Spray a casserole dish with a non stick cooking spray.
  6. Cover the bottom of the dish with part of sweet potatoes.
  7. Layers part of the apples over the sweet potatoes.
  8. Continue layering until all the sweet potatoes and apples have been layered.
  9. Place a saucepan over lower heat.
  10. Pour the orange juice into the pan.
  11. Stir in the brown sugar and cornstarch.
  12. Add the ground cloves.
  13. Heat the mixture over low heat stirring continuously until sauce begins to thicken about 5 minutes.
  14. Once the sauce has thickened to you licking pour it over the sweet potatoes and apples.
  15. Sprinkle the top of the casserole with the pecan pieces.
  16. Bake 18 minutes or until the apples are fork tender.

Serves 6

l.  You can replace the pecans with walnuts or use mini marshmallows instead.
