Fruited Holiday Rib Roast

If your wanting something a little different from the traditional  ham and turkey try this yummy and easy rib roast. Beef rib roasts make a great centerpiece for that Christmas dinner. With the added fruits and onion this Christmas meat makes everyone’s mouth water in anticipation. This seems like it is hard but it is not as hard as it looks and is always a hit.

What You Need:

  • 1 (6 lb) beef rib roast
  • 1 T anise seed, crushed
  • 3 garlic cloves, minced
  • 3 T olive oil
  • 2 T Dijon mustard
  • 1/2 t salt

Christmas Hens for Two

Since yesterday I shared an article for a Christmas dinner for two I thought it would be good to share a recipe for that special dinner. This would be perfect with Rice Pilaf and steamed veggies. This would also make a wonderful date night meal when you have a chance to have just you and your special someone home.

What You Need:

  • 2 T onion, chopped fine
  • 1/3 C long grain rice, uncooked
  • 4 T butter, divided
  • 1/2 C cream of celery soup
  • 3/4 C water
  • 1 T lemon juice
  • 1 t chives, dried

Savory Peach Ham

This would make a yummy ham dinner if your having a small dinner or having more then one meat dish for dinner.

What You Need:

  • 1/4 C ketchup
  • 1 T brown sugar
  • 1 T cider vinegar
  • 2 t Worcestershire sauce
  • 1 t + 2 T canola oil
  • 1/4 t pepper
  • 4 (4 oz ea) ham slices, boneless and fully cooked
  • 1 (8.5 oz) can sliced peaches, drained

Turkey Leftover Quiche

With the holiday parties coming up, turkey is still a common food that is served, often times still lots of leftovers are brought home and the ideas run out usually right after Thanksgiving after that bird has been cooked. Here is a quick easy quiche that you can make from Turkey leftovers. It’s great for those office parties and after Holiday get together.

Ingredients:

  • 5 large eggs
  • 2 1/2 -3 cups leftover stuffing or half of a 6 oz package bread stuffing mix, prepared according to package directions
  • 1 cup shredded Swiss cheese
  • 1 cup diced cooked turkey

Plain and Simple Tenderloin Roast

Often times we want to have a roast for dinner yet to some this seems like a taunting meal it is really a simple meal that anyone can do even those who have a small fear of the the kitchen.

Ingredients:   

1 trimmed beef sirloin, about 3 pounds
1 tablespoon olive oil
1/2 teaspoon pepper
1/2 teaspoon salt 

Instructions:
  1. Cover the tenderloin completely with the olive oil.
  2. Sprinkle pepper over the oiled tenderloin.
  3. Place a rack in a baking pan.
  4. Place the prepared tenderloin on the rack.
  5. Set the oven temperature at 425 degrees and allow the oven to heat.
