<li class="ingredient">8 oz lean ground beef</li>
<li class="ingredient">1 cup broccoli florets, finely chopped</li>
<li class="ingredient">1/4 + 1/4 cup Cheddar cheese, shredded</li>
<li class="ingredient">1 cup water</li>
<li class="ingredient">1/2 cup reduced-fat sour cream</li>
<li class="ingredient">3 spring onions, sliced</li>
<li class="ingredient">Salt and pepper</li>
</ul>

<ol>
<li class="instruction">Pierce potatoes with fork all over and cook in microwave until soft (about 20 minutes).</li>
<li class="instruction">In a large skilled, cook the meat until browned and cooked through, then transfer into a bowl. Add the broccoli and water to the skilled, increase the heat and cook until tender, about 4 to 5 minutes. Drain the broccoli and add to the meat.</li>
<li class="instruction">Once the potatoes are cool enough to handle, cut the top third off the potatoes. Set the tops aside for future use. Scoop out the inside of the potatoes and place into a bowl. Mix in the sour cream, ¼ cup of cheddar and spring onion and season with salt and pepper. Add this mixture to the meat and broccoli and combine well.</li>
<li class="instruction">Arrange the potato shells on a baking dish and divide the meat and potato mixture evenly amongst them. Sprinkle with the remaining cheese and place under the broiler until the cheese is melted and bubbly.</li>

1 ½ cups onions, chopped<br />
3 tbsp olive oil<br />
8 large garlic cloves, chopped<br />
2 19oz cans red kidney beans<br />
2 19 oz cans black beans<br />
1 red pepper, cut in chunks<br />
1 green pepper, cut in chunks<br />
1 15 oz can tomato sauce<br />
1 6oz can tomato paste<br />
¼ cup taco seasoning<br />
1 tsp dried basil<br />
½ tsp dried oregano<br />
½ tsp dried thyme<br />
3 cups vegetable broth<br />
Salt and pepper to taste</p>
<p>Instructions:<br />
Heat the olive oil in a skillet. Add garlic and onions and sauté until onions are translucent. Add peppers and beans, taco seasoning and spices. Sauté for a further few minutes, then add tomato sauce, tomato paste and vegetable broth. Mix well.</p>
<p>Simmer until the chili mixture thickens, approximately 45 minutes. Season with pepper and salt and serve with grated cheese and tortilla chips.</p>

<p>1 garlic clove, minced</p>
<p>1 t salt</p>
<p>1/2 t pepper</p>
<p>1 onion, sliced</p>
<p>8 strips of bacon</p>
<p><strong>How to Make It:</strong></p>

<p>Set the oven temperature to 325 degrees and allow the oven to preheat.</p>
<p>Lay the roast, fat side up, on a rack placed into a shallow baking dish.</p>
<p>Rub the roast with garlic on all sides.</p>
<p>Sprinkle the salt and pepper over the entire roast.</p>
<p>Cover the top of the roast with the onions.</p>
<p>Add the bacon strips over the onion slices.</p>
<p>Bake, uncovered, 3 hours or until a meat thermometer reaches 160 degrees for medium or 170 degrees for well done.</p>
<p>Transfer the meat to a platter and allow it to stand undisturbed for 15 minutes.</p>
<p>Makes 10 servings</p>
<p>Preparation time:  approximately 15 minutes</p>
<p>Cooking time:  approximately 3 hours and 15 minutes</p>
<p>Total time:  approximately 3 hours and 30 minutes</p>
<p>What a simple but elegant meat to serve on a special day.  It doesn&#8217;t take a lot of effort to put together and the best part is that while it cooks you can enjoy your family.</p>

<p>1 lb. beef flank stead</p>
<p>1 T soy sauce</p>
<p>8 oz. rice noodles</p>
<p>1 cucumber</p>
<p>1/2 C Asian sweet chili sauce</p>
<p>1/2 C of water</p>
<p>1 C fresh julienned carrot</p>
<p>Fresh cilantro</p>
<p><strong>How to Make It:</strong></p>
<p><strong> </strong></p>
<p>Allow the broiler to preheat.</p>
<p>Brush the steak on both sides with the soy sauce.</p>
<p>Place he steak on the broiler pan rack.</p>
<p>Broil 5 inches from the heat for 18 minutes or until a meat thermometer reaches 160 degrees for medium done, turning once during cooking time.</p>
<p>Remove the steak to a platter and slice in thin strips across the grain.</p>
<p>Cook the rice noodles according to package directions.</p>
<p>Drain the noodles well and rinse under cool water.</p>
<p>Slice the cucumbers crosswise into three sections.</p>
<p>With a vegetable peeler cut ribbons lengthwise from each piece.</p>
<p>Place the chili sauce into a mixing bowl.</p>
<p>Whisk the water into the chili sauce until well combined.</p>
<p>Divide the steak, noodles, cucumber ribbons and carrots into four serving bowls.</p>
<p>Pour 1/4 of the sauce over each salad.</p>
<p>Sprinkle the cilantro over the top of each salad just before serving.</p>
<p>Makes 4 servings</p>
<p>Preparation time:  approximately 13 minutes</p>
<p>Cooking time:  approximately 18 minutes</p>
<p>Total time:  approximately 25 minutes</p>
<p>When you love salads this one can&#8217;t be beat.  If you can&#8217;t find Asian sweet chili sauce in your local supermarket try your favorite Italian style dressing works just as well.</p>

<li>1/4 c Parmesan cheese</li>
<li>1/2 tsp. pepper</li>
<li>1/4 tsp. garlic powder</li>
<li>2 tbsp low sodium steak sauce (your favorite)</li>
</ul>
<p><strong>How to Make It:</strong></p>
<p><strong> </strong></p>
<ul>
<li>Cook the bacon in a skillet over medium heat until crisp.</li>
<li>Drain the bacon well on a piece of paper towel.</li>
<li>Place the onion in the bacon drippings.</li>
<li>Cook the onion 5 minutes or until tender.</li>
<li>When the onion is tender crumble the bacon into the skillet.</li>
<li>Add the mushrooms and cook an additional 1 minute.</li>
<li>Remove from heat, do not drain and set aside to cool.</li>
<li>Place the ground chuck and sausage into a large mixing bowl.</li>
<li>Mix the two together with your hands.</li>
<li>Sprinkle in the cheese, pepper and garlic powder.</li>
<li>Pour in the steak sauce and mix well with your hands.</li>
<li>When all the ingredients are mixed well make 16 not too thick patties.</li>
<li>Place the bacon mixture over the top of 1/2 of the patties.</li>
<li>Be careful to not get to close to the edge of the patties.</li>
<li>Place the other 8 patties on top of each one of the covered patties.</li>
<li>Press the patties together and be sure to seal all the way around.</li>
<li>Heat the grill to medium temperature and allow to heat up.</li>
<li>Grill the burgers until well done.</li>

			<content:encoded><![CDATA[<p>I do know what your thinking, why on earth would I want to put meatloaf on the grill? How can this work? Meatloaf needs a pan. These things also went through my mind the first time. However this really works.</p>

<p><strong>What You Need:</strong></p>
<p><strong> </strong></p>
<ul>
<li>2 lbs lean ground beef</li>
<li>2 onions, minced</li>
<li>2 garlic cloves, minced</li>
<li>2 TBSP parsley, chopped</li>
<li>1 tsp ground coriander</li>
<li>1 tsp ground cumin</li>
<li>2 tsp salt</li>
<li>1 tsp pepper</li>
<li>2 flat metal skewers</li>
</ul>
<p><strong>How to Make It:</strong></p>
<p><strong> </strong></p>
<ol>
<li>Place the ground beef in a food processor.</li>
<li>Add the onion, garlic and parsley.</li>
<li>Process until mixture becomes smooth.</li>
<li>Remove and place in a large mixing bowl.</li>
<li>Add the coriander, cumin, salt and pepper to the mixture.</li>
<li>With your hands mix all the ingredients together well.</li>
<li>Form the mixture into two meatloaves.</li>
<li>Run the skewers through the center of each loaf.</li>
<li>Heat the grill to medium high.</li>
<li>Place the loaves on the grill and cover.</li>
<li>Cook 20 minutes turning over half way through the cooking time.</li>
</ol>
<p>If you like your ground beef a little rarer you can cook these for about 15 minutes.  For more well done meat cook just a little longer.</p>
