What You Need:

  • 1 tbsp olive oil + extra if needed during cooking
  • 1 small zucchini, sliced into 1/4 in slices
  • 1 small onion, wedged
  • 1 (6 oz) can sliced mushrooms, drained
  • 1 small red sweet pepper, cut into 2 in strips
  • 2 C  fresh bean sprouts
  • 1 tbsp soy sauce
  • 1/2 tsp sugar
  • 1/8 tsp pepper

How to Make It:

  1. Place the olive oil into a wok.
  2. Heat to medium high heat.
  3. Add the zucchini and onion and cook 3 minutes or until crisp but tender.

What You Need:

  • 1 TBSP chili powder
  • 1 tsp. oregano
  • 1 tsp. light brown sugar
  • 1/2 tsp cayenne
  • 1/4 tsp pepper
  • 1 2 1/2 lb center cut ham steak about 1 1/2 inches thick
  • 1 TBSP unsalted butter, melted

How to Make It:

  1. In a small bowl blend together the chili powder, oregano, brown sugar, cayenne and pepper.
  2. Brush both sides of the ham steak with the melted butter.
  3. Sprinkle both sides with the chili powder mixture being sure to press into the meat.

My oldest son loves this meal for lunch, its quick and easy can make it him self in the morning before school. And is very filling.  A side salad or some tortilla chips can be added for the perfect lunch.

What You Need:

  • 1/2 C canned black beans
  • 1/2 C canned corn, drained
  • 1/2 C brown rice, cooked
  • 1/4 C salsa

How to Make It:

  1. Place the beans and corn in a saucepan.
  2. Add the cooked brown rice.
  3. Stir in the salsa.
  4. Place the saucepan on the stove over low heat.

Looking for a fun lunch for your little ones to celebrate Halloween?  Or maybe a snack they can help you make? Try these fun Halloween ham slices

Ingredients:

  • 4 ham steaks
  • 2 tablespoons of canola oil
  • 2 pickles, cut into 4 long strips
  • 4 black olives, cut into 3 slices each
  • 4 hard cooked eggs, cut in half
  • Red pimento
  • 8 baby carrots
  • 4 pieces of string cheese

Instructions:

  1. Place the canola oil in a large skillet over medium heat.
  2. Place the ham steaks into the skillet.

A kid favorite in our house in the Thermos Chicken Chowder

What You Need:

  • 1 tbsp canola oil
  • 1 onion, chopped fine
  • 2 tbsp flour
  • 1/2 tsp poultry seasoning
  • 1 1/2 C milk
  • 1 c frozen hash browns
  • 1 c corn, frozen
  • 3/4 C chicken breast, cooked and cubed
  • 1 tsp salt
  • 1/2 tsp pepper

How to Make It:

  • Place the oil in a large sauce pan over medium heat.
  • Allow the oil to heat slightly.
  • Add the onion and cook stirring occasionally, 5 minutes or until tender.
