			<content:encoded><![CDATA[<p>Lunch ideas are always hard to come, sometimes it is hard to be creative and give yourself or your children something new to eat so you dont fall in to a lunch rut.</p>
<p>Ingredients:</p>
<p>2 – 3 medium flour tortillas<br />
2 cooked chicken breasts, diced<br />
¼ cup red and yellow bell peppers, diced<br />
1 celery stalk, diced<br />
1 tbsp mayonnaise<br />
1 tbsp plain yogurt<br />
¼ cup cheddar cheese, cut into small cubes<br />
Salt and pepper to taste</p>
<p>Instructions:<br />
Add chicken, cheese, mayonnaise, yogurt, bell peppers and celery into a bowl and mix well. Add salt and pepper.</p>
<p>Warm tortilla slightly to make it easier to fill. Place ½ &#8211; 1 cup of chicken filling on top of the tortilla and wrap.</p>
<p>Enjoy tortilla in your lunchbox instead of a sandwich.</p>

<p>There are many variations to this soup.  Try grated zucchini.  Add rice or cooked pasta to the mix.  Use canned beans instead of lentils.  If you use lentils be sure they are red not green lentils. Green lentils take awhile to cook down.</p>

<p><strong>What You Need:</strong></p>
<ul>
<li>1 (6 oz.) can light tuna in water, drained and flaked</li>
<li>1/4 C of mayonnaise</li>
<li>1 celery rib, rinsed, trimmed and chopped</li>
<li>1/4 C of black olives, pitted and chopped</li>
<li>1 t parsley flakes</li>
<li>1/8 t pepper</li>
<li>1/4 t lemon juice</li>
<li>2 slices rye bread, lightly toasted</li>
<li>1/2 C sharp cheddar cheese, shredded</li>
</ul>
<p><strong>How to Make It:</strong></p>
<ol>
<li>Set the broiler to preheat.</li>
<li>Cover a cookie sheet completely with heavy duty aluminum foil.</li>
<li>Place the tuna into a mixing bowl.</li>
<li>Fold the mayonnaise in with the tuna.</li>
<li>Add the celery and olives and blend to combine well.</li>
<li>Sprinkle in the parsley and pepper.</li>
<li>Pour the lemon juice into the mixture and stir until all the ingredients are combined together well.</li>
<li>Place the rye bread slices on the prepared baking sheet.</li>
<li>Divide the tuna mixture between the 2 slices of bread spreading it out evenly.</li>
<li>Sprinkle the cheese over the top of both slices of bread.</li>
<li>Broil 6 inches from the heat for 2 minutes or until the cheese is melted and bubbly.</li>

<li>Broil 4 inches from the heat for 12 minutes being sure to turn the burger half way through the cooking time.</li>
<li>Spread the remaining mayonnaise mixture onto the pita bread slices.</li>
<li>Place a patty onto one side of the pita bread.</li>
<li>Add 2 slices of onion and 2 spinach leaves on top of the burger.</li>
<li>Fold the pita over the top of the burger.</li>

<p>2 pieces of Texas toast</p>
<p>1 slice of Cheddar cheese</p>
<p>3 slices hickory smoked bacon, cooked crisp</p>
<p>2 slices of sweet red bell pepper</p>
<p>1 slice of Swiss cheese</p>
<p><strong>How to Make It:</strong></p>
<p><strong> </strong></p>
<p>Spread the butter on one side of each piece of Texas toast.</p>
<p>Place one slice of toast in a small skillet over medium heat.</p>
<p>Add the slice of Cheddar cheese.</p>
<p>Place the bacon on top of the Cheddar cheese.</p>
<p>Lay the bell pepper slices over the bacon.</p>
<p>Add the slice of Swiss cheese over the pepper slices.</p>
<p>Place the second piece of Texas toast, butter side up on the top.</p>
<p>Grill for 3 minutes, turn and continue grilling an additional 3 minutes or until browned and the cheese has begun to melt.</p>
<p>Makes 1 serving</p>
<p>This is a special twist to an old favorite.  It&#8217;s easy enough that you can even help a child prepare it.  Add a dish of cottage cheese or applesauce and give Mom a lunch she won&#8217;t soon forget.</p>
