If your looking for a change to the normal applesauce,  this recipe will change things up for you a little and the kiddos will love it. Perfect for lunches

Stewed Rhubarb Applesauce

What You Need:

  • 4 c fresh rhubarb, cut into 1/2 in chunks
  • 2 apples, peeled and chopped
  • 2 tbsp granulated sugar substitute
  • 1 c water
  • 2 tbsp unsalted butter
  • 1 tsp. vanilla

How to Make It:

  • Place the rhubarb into a large sauce pan.
  • Add the apples to the pan.
  • Stir in the sugar substitute.

Every once in a while we are wanting something special to add to our lunch menu.  This is a yummy option

What You Need:

  • 1 TBSP lemon juice
  • 2 C apple juice
  • 2 cinnamon sticks
  • 1/2 tsp. grated lemon peel
  • 1/4 tsp. salt
  • 2 Red Delicious apples, cored, peeled and diced
  • 1 1/2 C pineapple chunks, in their own juice
  • 1 orange, peeled and sectioned

How to Make It:

  1. Pour the lemon juice and the apple juice together in a large saucepan.

Often times I sit and want just a small snack to keep on my desk while I am tying away something that is yummy and not too fattening. I like having a bowl of something to just grab and snack on while I work. And I am sure you know that fresh veggies don’t always cut it or curb that sugar need.  So this little mix helps cover that need.

Maple and Spice Snack Mix

What You Need:

  • 1/4 c sugar free pancake syrup
  • 2 tbsp unsalted butter, cut up in small chunks
  • 1 tbsp chili powder
