Cauliflower Lemon Vinaigrette Salad

This is a great side to any meal,  I usually prefer this with baked fish or chicken.

What You Need:

  • 4 c cauliflower florets
  • 1 c black olives
  • 3/4 c green bell pepper, chopped
  • 1/2 c onion, chopped
  • 1/4 c canola oil
  • 3 tbsp white wine vinegar
  • 3 tbsp lemon juice
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

How to Make It:

  1. Toss together the cauliflower, olives, bell pepper and onions in a large salad bowl.
  2. In a separate bowl place the canola oil and vinegar together.
  3. Pour in the lemon juice and combine to incorporate the flavors.
  4. Sprinkle in the salt and pepper and mix well.
  5. Pour over the cauliflower mixture.
  6. Toss to coat evenly.
  7. Cover the bowl with a snug fitting lid.
  8. Refrigerate overnight being sure to turn the bowl over a couple of times while chilling to incorporate the flavors together.
  9. Stir well before serving.

This is a picnic favorite.  By allowing the salad to set overnight the flavors have a chance to combine.  This salad is also good made with broccoli.
