This is a great side to any meal, I usually prefer this with baked fish or chicken.
What You Need:
- 4 c cauliflower florets
- 1 c black olives
- 3/4 c green bell pepper, chopped
- 1/2 c onion, chopped
- 1/4 c canola oil
- 3 tbsp white wine vinegar
- 3 tbsp lemon juice
- 1/2 tsp. salt
- 1/4 tsp. pepper
How to Make It:
- Toss together the cauliflower, olives, bell pepper and onions in a large salad bowl.
- In a separate bowl place the canola oil and vinegar together.
- Pour in the lemon juice and combine to incorporate the flavors.
- Sprinkle in the salt and pepper and mix well.
- Pour over the cauliflower mixture.
- Toss to coat evenly.
- Cover the bowl with a snug fitting lid.
- Refrigerate overnight being sure to turn the bowl over a couple of times while chilling to incorporate the flavors together.
- Stir well before serving.
This is a picnic favorite. By allowing the salad to set overnight the flavors have a chance to combine. This salad is also good made with broccoli.
