Creamy Summer Vegetable Delight

I am always looking for new ways to make meals on the go I enjoy going to the park or with 4 kids sometimes eating happens in the car. So I love thermos meals.  This one is super yummy

Creamy Summer Vegetable Delight
What You Need:

  • 1 (16 oz) pkg. of frozen carrots, cauliflower and broccoli (I usually use a fresh ‘Stir Fry’ Mix from the veggie section)
  • 1 (10.75 oz) can cream of chicken soup (I sometimes use Cream of Mushroom with garlic)
  • 1/3 C sour cream
  • 1 C cheddar cheese, shredded (I use a mix of pepper jack and cheddar)
  • 1 (2.8 oz) container of French fried onions
  • 1/4 tsp. pepper (I just do a light sprinkle I’m not a pepper fan)

How to Make It:

  1. Cook the vegetables as the package directs.
  2. Be sure to drain the vegetables well.
  3. Place the drained vegetables in a large mixing bowl.
  4. Spray a baking pan with a non stick cooking spray.
  5. Bring the oven temperature to 350 degrees.
  6. Pour the soup in with the vegetables.
  7. Dump in the sour cream.
  8. Sprinkle in 1/2 cup of the cheese and 1/2 of the French fried onions.
  9. Add the pepper.
  10. Stir together well making sure all the vegetables are covered and the mixture is of a creamy consistency.
  11. Pour into the prepared baking pan.
  12. Bake 30 minutes.
  13. Remove from the oven and layer the top with the remaining cheese and onions.
  14. Return to the oven and continue baking 8 minutes or until the cheese has completely melted.
  15. Place in a warm thermos.

Serves 4

Because this is so creamy kids seem to eat it up never knowing that it contains vegetables they usually turn their nose up to.
