French Toast Smothered in Pear Syrup

On Weekend Morning sometimes it is great to wake up and make a warm yummy breakfast to fill your tummy to get off to a running start especially this time of the year when the day if filled with tons of snow play or maybe shopping. This is a great French Toast recipe to get you headed on your way out the door with a warm full tummy.

Ingredients:

  • 1/2 cup water
  • 1 cup sugar
  • 1 slice lemon zest
  • 4 cups pears, peeled, cored and sliced
  • 3 large eggs
  • 2 cups milk
  • 1/2 cup sugar
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 2 teaspoons vanilla extract
  • 12 slices bread, slightly stale

Instructions:

  1. Place the water in a sauce pan.
  2. Add the sugar and lemon zest.
  3. Bring the mixture to a rapid boil over high heat.
  4. Turn the heat down to low once boiling and continue to cook 6 minutes.
  5. Sauce should turn to a syrup consistency.
  6. Add the pears and cook another 8 minutes or until the pears are fork tender.
  7. Once tender remove the pears with a slotted spoon from the juice and place them in a bowl.
  8. Place the juice back over medium high heat and continue cooking 5 minutes.
  9. Some of the juice will evaporate.
  10. After 5 minutes remove the pan from the heat and pour the juice over the top of the pears.
  11. Cover and set aside.
  12. Place the eggs in a large mixing bowl.
  13. Pour in the milk. Add the sugar, cinnamon, nutmeg and vanilla to the egg milk mixture.
  14. Whisk the ingredients together being sure they are combined well.
  15. Heat a griddle that’s been sprayed with a non stick cooking spray.
  16. The griddle is hot when a drop of water dances on the surface.
  17. Lay a slice of bread into the egg mixture being sure to coat well.
  18. Place the coated bread on the hot griddle.
  19. Cook about 4 minutes or until the bottom is a nice brown, flip and continue cooking 3 minutes or until browned.
  20. Continue with each slice of bread.

When ready to server pour the pear mixture over the top of the French toast.
