Ginger not only livens up so many recipes but it also is used to ward off colds and flu!!
Ingredients:
- 1 pound of fresh or thawed frozen baby carrots
- 1/3 cup of orange marmalade
- 2 tablespoons of butter
- 2 teaspoons of Dijon style mustard
- 1/2 teaspoon of grated fresh ginger
Instructions:
- Cook carrots in saucepan and drain or steam them, whichever you prefer.
- Return carrots to saucepan and stir in the butter, mustard, marmalade and ginger. Mix well.
- Simmer on medium setting stirring frequently until carrots are glazed.
