This is a great potato side or appetizer for any meal. Our family loves these when we have a nice steak or sometimes just with a big salad for lunch, so they are a yummy addition to any type of meal.

What You Need:

  • 3 large baking potatoes
  • 1/4 C canola oil
  • 2 t paprika
  • 1 t salt
  • 1/2 t pepper
  • 2 T Parmesan cheese, grated

How to Make It:

  2. Line a baking pan with foil then spray the foil with a non stick cooking spray.
  3. Wash the potatoes under cold water then pat dry.
  4. Cut each potato into 8 even size wedges.
  5. Place the oil, paprika, salt and pepper into a sealable plastic bag.
  6. Seal and shake to mix the ingredients together.
  7. Add the potatoes and reseal.
  8. Shake until all the potatoes are covered well.
  9. Remove the potatoes and place skin side down in the prepared baking pan.
  10. Sprinkle the Parmesan cheese over all the potatoes.
  11. Bake 35 minutes or until the potatoes are fork tender.

These potato wedges make a great side dish for any special meal.  Serve them with a little sour cream or salsa and your loved ones will be in seventh heaven.   These are also really yummy if you use Sweet Potatoes instead of regular potatoes.
