Whole Wheat Apple Flapjacks

I will admit this is not the healthiest of recipes but it is a yummy way to start the day or add to a buffet style brunch.

What You Need:

  • 32 soft caramels
  • 1 (12 oz) can evaporated milk
  • 1 C unsalted butter
  • 2 Gala apples, peeled and diced fine
  • 2 eggs
  • 2 TBSP light brown sugar, packed firm
  • 1/2 tsp. vanilla extract
  • 1 C all purpose flour
  • 1 C whole wheat flour
  • 2 tsp. baking powder
  • 2 tsp. ground cinnamon
  • 1/8 tsp. salt

How to Make It:

  1. Place the caramels in a microwave safe bowl.
  2. Pour the evaporated milk in the bowl with caramels.
  3. Microwave on high 1 minute.
  4. Allow to stand in the microwave 1 minute.
  5. Microwave on high an additional 1 minute.
  6. Add the butter.
  7. Microwave an additional 30 seconds on high.
  8. Remove from microwave and stir to blend ingredients together well.
  9. Fold in the apples.
  10. In a separate bowl whisk the eggs and brown sugar together.
  11. Add the vanilla and whisk until well blended.
  12. Fold in the caramel mixture.
  13. Sift the flours, baking power, cinnamon and salt together in another bowl.
  14. Stir the moist mixture into the dry mixture just until combined and dry mixture is moistened.
  15. Heat a skillet over medium heat until hot.
  16. Add oil to the hot griddle to cover.
  17. Place 1/4 C of batter in the hot skillet.
  18. Cook 2 minutes or until bubbles appear around the edges.
  19. Flip and cook an additional 1 minute or until golden brown.
  20. Continue until all the batter has been used.

Makes 20 pancakes

To keep pancakes warm place them on a plate in a low temperature oven.
